Savory Apple & Onion Crockpot Pork Chops

Ingredients
4 bone-in pork chops
2 large apples, peeled and sliced
1 large onion, sliced
1 cup chicken broth
1/2 cup apple cider
2 tbsp olive oil
1 tbsp Dijon mustard
2 tsp fresh thyme leaves
1 tsp salt
1/2 tsp black pepper
1 tbsp cornstarch
2 tbsp water
Instructions
1. Heat olive oil in a skillet over medium-high heat and sear the pork chops on each side until golden brown. Remove and set aside.
2. In the same skillet, add sliced onions and cook until they begin to soften, about 5 minutes.
3. In a slow cooker, layer the apple slices on the bottom followed by the browned onions.
4. Place the seared pork chops on top of the apples and onions.
5. In a bowl, whisk together chicken broth, apple cider, Dijon mustard, thyme, salt, and pepper. Pour this mixture over the pork chops.
6. Cover and cook on low for 6-8 hours or until the pork is tender.
7. Remove chops and keep warm. Mix cornstarch and water to create a slurry, then stir into the liquid in the slow cooker until thickened.
8. Serve pork chops topped with apple-onion mixture and gravy.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a skillet over medium heat until warmed through, or microwave on a microwave-safe plate until heated.
