Rustic Vegetable Goulash

Ingredients
2 tbsp olive oil
1 large onion, chopped
3 cloves garlic, minced
2 large carrots, sliced
1 red bell pepper, chopped
2 cups butternut squash, cubed
1 large zucchini, sliced
1 can (14.5 oz) diced tomatoes
2 cups vegetable broth
2 tbsp smoked paprika
1 tsp caraway seeds
Salt and pepper to taste
1 tbsp fresh parsley, chopped
1 cup sour cream (optional, for serving)
Instructions
1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, sauté until fragrant and translucent.
3. Stir in the carrots, bell pepper, butternut squash, and zucchini; cook for 5 minutes.
4. Add the diced tomatoes, vegetable broth, smoked paprika, and caraway seeds.
5. Season with salt and pepper to taste, and bring to a boil.
6. Reduce heat, cover, and simmer for 30 minutes, or until vegetables are tender.
7. Garnish with fresh parsley and serve with a dollop of sour cream if desired.
Storage
Store leftovers in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat gently on the stove over low heat, stirring occasionally, until heated through.
