Ingredients
2 lbs beef chuck, cut into 1-inch cubes
2 tbsp olive oil
1 large onion, diced
3 cloves garlic, minced
4 cups beef broth
2 cups water
1 can (14.5 oz) diced tomatoes
2 carrots, sliced
2 stalks celery, chopped
1 cup green beans, cut into 1-inch pieces
2 potatoes, peeled and cubed
2 tbsp Worcestershire sauce
1 tbsp dried thyme
1 bay leaf
Salt and pepper to taste
Fresh parsley, chopped, for garnish
Instructions
1. Heat olive oil in a large pot over medium heat, add beef cubes, and brown on all sides.
2. Add diced onion and minced garlic, sauté until onion is translucent.
3. Pour in beef broth and water, then add diced tomatoes, stirring to combine.
4. Add carrots, celery, green beans, and potatoes to the pot.
5. Stir in Worcestershire sauce, dried thyme, and bay leaf.
6. Bring the mixture to a boil, then reduce heat to low and simmer for 90 minutes.
7. Season with salt and pepper to taste, remove bay leaf.
8. Serve hot, garnished with fresh parsley.
Storage
Allow the soup to cool completely and store in an airtight container in the refrigerator for up to 3 days or in the freezer for up to 3 months.
Reheating
To reheat, transfer the desired amount to a saucepan and heat over medium-low, stirring occasionally, until hot. Alternatively, microwave in a microwave-safe bowl, stirring halfway through.
