Rustic Vanilla Peach Cobbler

Ingredients
4 cups sliced fresh peaches
1 cup granulated sugar
1/2 cup packed light brown sugar
1 teaspoon vanilla extract
1 teaspoon lemon juice
1/2 cup unsalted butter
1 cup all-purpose flour
1 cup milk
2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a large mixing bowl, combine the sliced peaches, 1/2 cup of granulated sugar, light brown sugar, vanilla extract, and lemon juice. Stir to combine and set aside.
3. Place the butter in a 9x13-inch baking dish and melt it in the preheated oven.
4. In another bowl, whisk together the flour, remaining 1/2 cup of granulated sugar, baking powder, and salt.
5. Gradually stir in the milk until you have a smooth batter.
6. Pour the batter over the melted butter in the baking dish. Do not stir.
7. Spoon the peach mixture evenly over the batter. Do not stir.
8. Sprinkle ground cinnamon on top.
9. Bake for 45-50 minutes, or until the topping is golden brown and the peaches are bubbly.
10. Allow to cool slightly before serving.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat individual servings in the microwave for 30-45 seconds or until warm.
