2 cloves garlic, minced

1 cup celery, diced

1/2 teaspoon dried thyme
1 cup green lentils
6 cups vegetable broth
1 can (14.5 oz) diced tomatoes
1 bay leaf
Salt and pepper to taste
1 tablespoon apple cider vinegar
1/4 cup fresh parsley, chopped for garnish

Instructions
