Ingredients
2 lbs russet potatoes (peeled and diced)
1 large onion (chopped)
2 cloves garlic (minced)
4 cups chicken broth
1 cup heavy cream
1/2 cup sour cream
2 tbsp unsalted butter
2 tsp salt
1 tsp black pepper
1 tsp dried thyme
1 tsp dried rosemary
1/2 cup fresh parsley (chopped)
1/4 cup chives (chopped)
1 tbsp olive oil
Instructions
1. In a large pot, heat olive oil over medium heat. Add onions and garlic, and sauté until onions are translucent.
2. Add potatoes, chicken broth, salt, pepper, thyme, and rosemary. Bring to a boil, then reduce heat and let simmer for 20 minutes, or until potatoes are tender.
3. Using an immersion blender, blend the soup until smooth.
4. Stir in heavy cream, sour cream, and butter. Let it cook for another 5 minutes.
5. Adjust seasoning to taste and stir in fresh parsley and chives before serving.
Storage
Store the soup in an airtight container in the refrigerator for up to 4 days.
Reheating
Reheat in a pot over medium heat, stirring occasionally until heated through.
