Rustic Herb Chicken and Dumplings

Ingredients
2 lbs chicken thighs
1 tbsp olive oil
1 cup chopped carrots
1 cup chopped celery
1 cup chopped onions
4 cloves garlic, minced
6 cups chicken broth
1 cup all-purpose flour
1 cup whole milk
2 tsp baking powder
1 tsp salt
1/2 tsp black pepper
2 tbsp mixed fresh herbs (parsley, thyme, rosemary), chopped
1/2 cup frozen peas
Instructions
1. In a large pot, heat olive oil over medium heat. Add chicken thighs and sear on both sides until golden brown. Remove and set aside.
2. In the same pot, add carrots, celery, onions, and garlic. Sauté until onions are translucent, about 5 minutes.
3. Return chicken to the pot and pour in the chicken broth. Bring to a boil, then reduce heat and let simmer for 30 minutes until chicken is cooked through.
4. While the chicken cooks, prepare the dumplings by mixing flour, milk, baking powder, salt, pepper, and chopped herbs in a bowl until a sticky dough forms.
5. Once chicken is cooked, remove from the pot, shred, and return to the pot. Stir in frozen peas.
6. Drop tablespoon-sized dollops of dumpling dough into the simmering broth. Cover the pot and cook for 15 minutes or until dumplings are fluffy.
7. Serve hot, garnished with additional fresh herbs if desired.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
To reheat, place in a saucepan over medium heat until warmed through, adding a splash of broth if needed.
