Ingredients
2 cups gluten-free flour blend
1/2 cup almond flour
1/4 cup flaxseed meal
1 tbsp baking powder
1 tsp salt
2 tsp dried rosemary
2 tsp dried thyme
1/4 cup olive oil
1 cup warm water
2 tbsp honey
1 tbsp apple cider vinegar
3 large eggs
Instructions
1. Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.
2. In a large bowl, mix together the gluten-free flour blend, almond flour, flaxseed meal, baking powder, salt, dried rosemary, and dried thyme.
3. In a separate bowl, whisk together the olive oil, warm water, honey, apple cider vinegar, and eggs until well combined.
4. Pour the wet ingredients into the dry ingredients and stir until a smooth batter forms.
5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
6. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
7. Allow the bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
Storage
Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week.
Reheating
To reheat, wrap slices in aluminum foil and warm in a 300°F oven for 10 minutes.
