Rustic Garlic-Infused Tomato Sauce

Ingredients
3 lbs ripe tomatoes
1/4 cup olive oil
1 medium onion, finely chopped
6 cloves garlic, roasted
1 tsp salt
1/2 tsp black pepper
1/2 tsp sugar
1/4 cup fresh basil leaves, chopped
1/4 cup fresh parsley, chopped
1 tsp dried oregano
1/2 cup red wine
1 tbsp tomato paste
Instructions
1. Preheat your oven to 400°F (204°C).
2. Cut the tomatoes in half and place them on a baking sheet. Drizzle with olive oil and roast for 25 minutes.
3. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until translucent.
4. Add the roasted garlic, salt, pepper, and sugar to the pot and stir for 2 minutes.
5. Add the roasted tomatoes, fresh basil, parsley, and oregano to the pot.
6. Pour in the red wine and tomato paste, stirring to combine all ingredients.
7. Bring the mixture to a simmer, let it cook uncovered for 30 minutes to thicken.
8. Use an immersion blender to puree the sauce until smooth.
9. Taste and adjust seasoning if necessary.
Storage
Store in an airtight container in the refrigerator for up to one week, or freeze for up to three months.
Reheating
Reheat gently on the stovetop over low heat, stirring occasionally.
