Rustic Chicken Hunter Style
A classic Italian dish that brings the rich, savory flavors of tender chicken simmered in a robust tomato and wine sauce accompanied by earthy herbs and vegetables.

Ingredients
4 lbs bone-in chicken pieces
1/4 cup olive oil
1 large onion, chopped
1 green bell pepper, sliced
8 oz mushrooms, sliced
3 cloves garlic, minced
1/2 cup dry white wine
1 can (28 oz) crushed tomatoes
1/2 cup chicken broth
1 tsp dried oregano
1 tsp dried basil
1 bay leaf
Salt and pepper to taste
1/4 cup fresh parsley, chopped
Instructions
1. Heat olive oil in a large skillet over medium heat. Brown the chicken pieces on all sides, then remove from the skillet.
2. In the same skillet, add onion, bell pepper, and mushrooms; cook until onions are translucent.
3. Stir in garlic and wine, scraping up any browned bits from the pan, and simmer until the wine reduces by half.
4. Add crushed tomatoes, chicken broth, oregano, basil, bay leaf, salt, and pepper. Stir to combine.
5. Return the chicken to the skillet, cover, and simmer over low heat for about 60 minutes until the chicken is tender.
6. Before serving, remove the bay leaf and sprinkle with fresh parsley.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stove over medium-low heat until heated through, or microwave on medium power.
