Rustic Cabbage Soup

Ingredients

1 tbsp olive oil
1 large onion, chopped
2 cloves garlic, minced
3 carrots, sliced
2 stalks celery, sliced
1 medium green cabbage, shredded
6 cups chicken broth
1 can (14.5 oz) diced tomatoes
1 tsp salt
1/2 tsp black pepper
1 tsp thyme
1 bay leaf

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add chopped onion and garlic, sauté until soft.
3. Stir in carrots and celery, cook for 5 minutes.
4. Add shredded cabbage and mix well.
5. Pour in chicken broth and diced tomatoes, stir to combine.
6. Season with salt, pepper, and thyme.
7. Add bay leaf, bring to a boil.
8. Reduce heat, cover, and simmer for 30 minutes.
9. Remove bay leaf before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.
