Roasted Delicata Squash

Ingredients
2 medium delicata squash
2 tablespoons olive oil
1 teaspoon salt
1/2 teaspoon black pepper
1 teaspoon dried thyme
1 tablespoon maple syrup
Instructions
1. Preheat your oven to 425°F (220°C).
2. Slice the delicata squash in half lengthwise, and scoop out the seeds.
3. Cut the squash into 1/2-inch thick half-moons.
4. In a bowl, toss the squash with olive oil, salt, pepper, and thyme until well coated.
5. Arrange the squash in a single layer on a baking sheet.
6. Roast in the preheated oven for 20-25 minutes, flipping halfway through, until tender and golden brown.
7. Drizzle with maple syrup, toss lightly, and serve warm.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for 5-10 minutes until warmed through.
