Roasted Broccoli with Lemon and Garlic

Ingredients
1 lb broccoli florets
2 tbsp olive oil
1 lemon, zested and juiced
2 cloves garlic, minced
1/4 tsp salt
1/4 tsp black pepper
1/4 cup grated Parmesan (optional)
Instructions
1. Preheat the oven to 425°F (220°C).
2. In a large bowl, toss broccoli florets with olive oil, lemon zest, lemon juice, minced garlic, salt, and black pepper until well coated.
3. Spread the broccoli in a single layer on a baking sheet.
4. Roast in the oven for 20-25 minutes, or until the edges are crispy and the broccoli is tender.
5. If desired, sprinkle grated Parmesan over the broccoli in the last 5 minutes of roasting.
6. Serve immediately.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a 350°F oven for 5-7 minutes or until warmed through.
