Roasted Beet and Citrus Salad

A vibrant and refreshing Roasted Beet and Citrus Salad that combines sweet beets with tangy citrus fruits, topped with a delightful honey-lime dressing. Perfect for a light lunch or a colorful side dish.

Ingredients

2 lbs fresh beets
3 oranges
2 grapefruits
1/4 cup olive oil
2 tbsp honey
2 tbsp lime juice
1/2 cup crumbled goat cheese
1/4 cup chopped fresh mint
Salt and pepper to taste
2 tbsp pumpkin seeds

Instructions

1. Preheat oven to 400°F.
2. Scrub beets clean and wrap each in aluminum foil.
3. Roast beets for 45 minutes or until tender.
4. Allow beets to cool, then peel and slice thinly.
5. Peel and segment oranges and grapefruits, removing any seeds.
6. In a bowl, whisk together olive oil, honey, and lime juice.
7. Arrange beet slices, citrus segments, and crumbled goat cheese on a platter.
8. Drizzle with honey-lime dressing.
9. Sprinkle with chopped mint and pumpkin seeds.
10. Season with salt and pepper to taste.

Storage

Store the salad in an airtight container in the refrigerator for up to 3 days.

Reheating

This salad is best served cold and does not require reheating.
