Rice and Lentil Mash

Ingredients
1 cup basmati rice
1 cup red lentils
4 cups water
1/2 teaspoon salt
1 tablespoon olive oil
1 small onion, finely chopped
1 clove garlic, minced
1/2 teaspoon ground cumin
1/4 teaspoon turmeric
1/4 teaspoon black pepper
1/4 cup chopped fresh cilantro
Instructions
1. Rinse the rice and lentils thoroughly under cold water until the water runs clear.
2. In a large pot, combine rice, lentils, and water, and bring to a boil over medium-high heat.
3. Reduce the heat to low, cover, and simmer for 20-25 minutes, or until the rice and lentils are tender and the water is absorbed.
4. In a separate pan, heat olive oil over medium heat. Add chopped onion and garlic, sauté until soft and translucent, about 3-4 minutes.
5. Stir in cumin, turmeric, and black pepper, and cook for another 1-2 minutes until fragrant.
6. Add the sautéed onion mixture to the cooked rice and lentils, stirring well to combine.
7. Using an immersion blender or food processor, blend the mixture until smooth and creamy, adding a little water if necessary to reach desired consistency.
8. Stir in chopped cilantro and adjust seasoning with salt to taste.
9. Serve warm and enjoy your nourishing rice and lentil mash.
Storage
Allow to cool to room temperature, then store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently in a saucepan over low heat, stirring occasionally. Add a splash of water if needed to achieve desired consistency.
