Rhubarb and Strawberry Delight

A delightful dessert that combines the tartness of rhubarb with the sweetness of strawberries, topped with a golden, buttery crumble.

Ingredients

3 cups rhubarb, chopped
3 cups strawberries, hulled and sliced
1 cup granulated sugar
1 tablespoon cornstarch
1 teaspoon vanilla extract
1 cup all-purpose flour
1 cup rolled oats
1 cup packed brown sugar
1 teaspoon ground cinnamon
1/2 cup unsalted butter, melted

Instructions

1. Preheat oven to 375°F (190°C).
2. In a large bowl, combine rhubarb, strawberries, granulated sugar, cornstarch, and vanilla extract. Mix well and spread into a 9x13 inch baking dish.
3. In another bowl, mix flour, oats, brown sugar, and cinnamon.
4. Stir melted butter into the flour mixture until crumbly.
5. Sprinkle the crumble mixture evenly over the fruit.
6. Bake for 40 minutes or until the topping is golden brown and the fruit is bubbly.
7. Allow to cool slightly before serving.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10-15 minutes or until warmed through.
