Refreshing Cabbage & Apple Coleslaw

This healthier twist on classic coleslaw combines crisp cabbage and sweet apples for a delightful side dish perfect for any meal. The creamy yogurt-based dressing adds tangy flavor while keeping it light and nutritious.

Ingredients

4 cups green cabbage, shredded
2 cups red cabbage, shredded
2 medium apples, cored and julienned
1 medium carrot, grated
1/4 cup red onion, finely diced
1/2 cup plain Greek yogurt
2 tbsp apple cider vinegar
1 tbsp honey
1 tsp Dijon mustard
1/4 tsp salt
1/4 tsp black pepper

Instructions

1. In a large mixing bowl, combine the shredded green and red cabbage.
2. Add the julienned apples, grated carrot, and diced red onion to the bowl and mix well.
3. In a separate bowl, whisk together the Greek yogurt, apple cider vinegar, honey, Dijon mustard, salt, and black pepper until smooth.
4. Pour the dressing over the cabbage mixture and toss until well combined.
5. Cover and refrigerate for at least 30 minutes to let the flavors meld together before serving.

Storage

Store the coleslaw in an airtight container in the refrigerator for up to 3 days.

Reheating

For best results, enjoy the coleslaw cold. It does not require reheating.
