Quinoa Veggie Burger

Ingredients

1 cup quinoa
2 medium sweet potatoes, peeled and cubed
1 cup black beans, drained and rinsed
1/2 cup breadcrumbs
1/4 cup finely chopped onion
2 cloves garlic, minced
1 tbsp olive oil
1 tsp ground cumin
1 tsp smoked paprika
1/2 tsp chili powder
Salt and pepper to taste
Whole-grain buns
Lettuce
Tomato slices
Avocado slices

Instructions

1. Cook quinoa according to package instructions and set aside.
2. In a large pot, boil sweet potatoes until tender, about 15 minutes. Drain and mash.
3. In a large bowl, combine cooked quinoa, mashed sweet potatoes, black beans, breadcrumbs, onion, garlic, olive oil, cumin, smoked paprika, chili powder, salt, and pepper.
4. Mix until well combined and form into 6 patties.
5. In a large skillet, heat a tablespoon of olive oil over medium heat. Cook patties for 5-7 minutes on each side until golden brown and heated through.
6. Serve on whole-grain buns with lettuce, tomato slices, and avocado slices.

Storage

Store uncooked patties in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat for 3-4 minutes on each side until heated through.
