Quinoa and Black Bean Bowl

A vibrant and nutritious bowl packed with protein-rich quinoa and black beans, combined with sweet corn, crunchy bell peppers, and a zesty hint of lime.

Ingredients

1 cup quinoa
2 cups water
1 can (15 oz) black beans, drained and rinsed
1 cup corn kernels
1 red bell pepper, diced
1 yellow bell pepper, diced
2 tablespoons lime juice
1 tablespoon olive oil
1 teaspoon cumin
Salt and pepper to taste
Chopped cilantro for garnish

Instructions

1. Rinse quinoa under cold water. In a saucepan, combine quinoa and water. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes until quinoa is cooked.
2. In a large bowl, combine cooked quinoa, black beans, corn, and diced bell peppers.
3. In a small bowl, whisk together lime juice, olive oil, cumin, salt, and pepper. Pour over the quinoa mixture and toss to combine.
4. Garnish with chopped cilantro before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the microwave for 1-2 minutes or until warm.
