Ingredients

2 cups old-fashioned oats
4 cups almond milk
1 cup pumpkin puree
1/4 cup maple syrup
1 tsp vanilla extract
1 1/2 tsp ground cinnamon
1/2 tsp ground nutmeg
1/4 tsp ground cloves
1/4 tsp ground ginger
1/4 tsp salt
Optional toppings: chopped nuts, dried cranberries, or a drizzle of additional maple syrup

Instructions

1. In a slow cooker, combine the oats, almond milk, pumpkin puree, maple syrup, vanilla extract, cinnamon, nutmeg, cloves, ginger, and salt. Stir well to combine.
2. Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the oats are tender and the mixture is creamy.
3. Stir the oatmeal before serving. Adjust sweetness with additional maple syrup if desired.
4. Serve hot, topped with your choice of chopped nuts, dried cranberries, or a drizzle of additional maple syrup.

Storage

Store leftovers in an airtight container in the refrigerator for up to 4 days.

Reheating

Reheat individual servings in the microwave for 1-2 minutes, stirring halfway through. Add a splash of almond milk if needed to reach desired consistency.
