Pollo Asado Tradicional

Ingredients

4 lbs whole chicken, quartered
1/4 cup olive oil
1/2 cup orange juice
1/4 cup lime juice
6 cloves garlic, minced
1 tbsp ground cumin
1 tbsp dried oregano
1 tbsp smoked paprika
1 tsp salt
1 tsp black pepper
1/4 cup chopped fresh cilantro

Instructions

1. In a large bowl, whisk together olive oil, orange juice, lime juice, garlic, cumin, oregano, paprika, salt, and black pepper.
2. Add the chicken pieces to the marinade, ensuring they are well coated. Cover and refrigerate for at least 4 hours, ideally overnight.
3. Preheat your grill to medium-high heat.
4. Remove the chicken from the marinade and place it on the grill skin-side down.
5. Grill the chicken for 25-30 minutes, turning occasionally, until the internal temperature reaches 165°F and the skin is crispy.
6. Remove from grill and let rest for 5 minutes before serving.
7. Garnish with fresh cilantro before serving.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F for 10-15 minutes or until heated through.
