Ingredients
1 lb boneless chicken thighs, cut into bite-sized pieces
1 cup fresh pineapple chunks
1/2 cup red bell pepper, diced
1/2 cup green bell pepper, diced
1/4 cup soy sauce
1/4 cup rice vinegar
3 tbsp brown sugar
2 tbsp cornstarch
1/2 cup pineapple juice
1/4 cup all-purpose flour
2 cloves garlic, minced
1 tbsp ginger, grated
2 tbsp vegetable oil
2 green onions, sliced
Salt and pepper to taste
Instructions
1. In a bowl, toss chicken pieces with flour, salt, and pepper. Set aside.
2. In a separate bowl, mix pineapple juice, soy sauce, rice vinegar, brown sugar, and cornstarch until smooth.
3. Heat oil in a skillet over medium-high heat and sauté garlic and ginger until fragrant.
4. Add chicken pieces to the skillet and cook until browned on all sides.
5. Add diced bell peppers and pineapple chunks to the skillet, stir-fry for 3-4 minutes.
6. Pour the pineapple sauce mixture into the skillet, stirring constantly until the sauce thickens.
7. Garnish with sliced green onions before serving.
Storage
Store leftover chicken in an airtight container in the refrigerator for up to 3 days.
