Pea and Mint Soup

This vibrant Pea and Mint Soup is a delightful springtime dish, combining sweet peas with fragrant mint to create a refreshing, chilled starter that awakens the senses.

Ingredients

1 tbsp olive oil
1 medium onion, chopped
2 cloves garlic, minced
4 cups vegetable broth
4 cups fresh or frozen peas
1/4 cup fresh mint leaves
Salt and pepper to taste
1/2 cup heavy cream (optional)
Lemon wedges for serving

Instructions

1. Heat olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, sauté until translucent.
3. Pour in the vegetable broth and bring to a boil.
4. Add the peas and cook until tender, about 5 minutes.
5. Remove from heat and add mint leaves.
6. Use an immersion blender to blend until smooth.
7. Stir in heavy cream if using, and season with salt and pepper.
8. Chill in the refrigerator for at least 2 hours before serving.
9. Serve with lemon wedges on the side.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

This soup is best served chilled and does not require reheating.
