8 oz pasta of choice

1/2 cup grated Parmesan cheese
2 tbsp olive oil
Salt and pepper to taste

Instructions

1. Cook pasta according to package instructions until al dente, then drain and set aside.
2. In a large skillet, heat olive oil over medium heat. Add onion and garlic, sauté until onions are translucent.
3. Add carrots and cook for 5 more minutes, until slightly softened.
4. Stir in spinach and vegetable broth, cover and let cook until vegetables are tender.
5. Transfer the vegetable mixture to a blender, add heavy cream, and blend until smooth.
6. Return the sauce to the skillet, stir in Parmesan cheese, and season with salt and pepper to taste.
7. Add the cooked pasta to the skillet, tossing to coat in the sauce.
8. Serve immediately, garnished with additional Parmesan cheese if desired.

Storage

Store leftover pasta in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, place pasta in a saucepan over medium-low heat and stir occasionally until warmed through. Add a splash of water or broth if the sauce is too thick.
