Oven-Roasted Summer Squash Delight
A delightful and simple oven-roasted summer squash recipe that brings out the natural sweetness of the squash, enhanced with aromatic herbs and spices.

Ingredients
2 lbs summer squash, sliced
2 tbsp olive oil
1 tsp kosher salt
1/2 tsp black pepper
1 tsp dried thyme
1 tsp garlic powder
1/4 cup grated Parmesan cheese
1 tbsp chopped fresh parsley
Instructions
1. Preheat the oven to 400°F (200°C).
2. In a large bowl, toss the sliced summer squash with olive oil, salt, pepper, thyme, and garlic powder until evenly coated.
3. Spread the squash slices in a single layer on a baking sheet.
4. Roast in the preheated oven for 20 minutes, stirring halfway through, until the squash is tender and lightly browned.
5. Remove from the oven and sprinkle with Parmesan cheese.
6. Return to the oven for an additional 5 minutes until the cheese is melted and bubbly.
7. Garnish with fresh parsley before serving.
Storage
Store leftover squash in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in a preheated oven at 350°F (175°C) for about 10 minutes or until warmed through.
