Ingredients

1 medium spaghetti squash
2 tbsp olive oil
1 tsp salt
1/2 tsp black pepper
1/2 tsp garlic powder
1/2 cup grated Parmesan cheese (optional)
1 tbsp freshly chopped parsley (optional)

Instructions

1. Preheat your oven to 400°F (200°C).
2. Slice the spaghetti squash in half lengthwise and scoop out the seeds with a spoon.
3. Drizzle the inside of the squash halves with olive oil and season with salt, black pepper, and garlic powder.
4. Place the squash halves cut-side down on a baking sheet lined with parchment paper.
5. Roast in the preheated oven for 35-45 minutes or until the outer skin is tender when pierced with a fork.
6. Remove from the oven and let the squash cool for a few minutes.
7. Use a fork to gently scrape the inside of the squash, creating spaghetti-like strands.
8. If desired, sprinkle with Parmesan cheese and chopped parsley before serving.

Storage

Store leftover spaghetti squash in an airtight container in the refrigerator for up to 5 days.

Reheating

To reheat, place the spaghetti squash in a microwave-safe dish and heat on high for 1-2 minutes, or until warmed through. Alternatively, reheat in a skillet over medium heat for 3-5 minutes.
