Oven-Baked Falafel with Tahini Sauce
These oven-baked falafels are a healthier take on the traditional fried version, offering a crispy exterior and tender interior. Made from chickpeas, vibrant herbs, and a blend of spices, they are paired with a creamy tahini sauce for an energizing and delicious meal.

Ingredients
1 15-oz can chickpeas, drained and rinsed
1/2 cup chopped fresh parsley
1/2 cup chopped fresh cilantro
1 small onion, chopped
3 cloves garlic, chopped
1 tsp ground cumin
1 tsp ground coriander
1/2 tsp cayenne pepper
1 tsp baking powder
1/4 cup all-purpose flour
Salt and black pepper to taste
2 tbsp olive oil
For the tahini sauce:
1/3 cup tahini
1/4 cup water
2 tbsp lemon juice
1 clove garlic, minced
Salt to taste
Instructions
1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. In a food processor, combine chickpeas, parsley, cilantro, onion, garlic, cumin, coriander, cayenne, salt, and pepper. Pulse until the mixture is coarse but holds together when pressed.
3. Add baking powder and flour to the mixture, pulsing until just combined.
4. Form the mixture into small patties and place them on the prepared baking sheet.
5. Brush the tops with olive oil and bake for 25-30 minutes, flipping halfway through, until golden and crisp.
6. While falafels are baking, prepare the tahini sauce by whisking together tahini, water, lemon juice, garlic, and salt in a small bowl.
7. Serve the falafel warm with tahini sauce drizzled over or on the side.
Storage
Store leftover falafel in an airtight container in the refrigerator for up to 4 days.
Reheating
To reheat, place falafel in a preheated oven at 350°F for 10 minutes or until warmed through.
