Old-Fashioned Fruit Delight Cake

Ingredients
1 cup of granulated sugar
2 large eggs
1/2 cup of unsalted butter, softened
2 cups of all-purpose flour
2 tsp of baking powder
1/2 tsp of salt
1 tsp of vanilla extract
1 can (15 oz) of fruit cocktail, undrained
1/2 cup of chopped walnuts
1/2 cup of shredded coconut
1/4 cup of brown sugar
Instructions
1. Preheat your oven to 350°F (175°C) and grease a 9x13 inch baking dish.
2. In a large bowl, cream together the sugar and butter until light and fluffy.
3. Beat in the eggs one at a time, then stir in the vanilla extract.
4. In a separate bowl, whisk together the flour, baking powder, and salt.
5. Gradually add the dry ingredients to the butter mixture, mixing until just incorporated.
6. Fold in the fruit cocktail with juices, walnuts, and coconut.
7. Pour the batter into the prepared baking dish and sprinkle the top with brown sugar.
8. Bake for 45 minutes or until a toothpick inserted into the center comes out clean.
9. Allow the cake to cool in the dish before slicing and serving.
Storage
Store covered at room temperature for up to 3 days or in the refrigerator for up to a week.

For best results, reheat individual slices in a microwave for 10-15 seconds or enjoy at room temperature.
