Old-Fashioned Broccoli Cheddar Soup

Ingredients
2 tbsp unsalted butter
1 medium onion, chopped
2 cloves garlic, minced
4 cups broccoli florets
4 cups chicken broth
2 cups heavy cream
3 cups sharp cheddar cheese, shredded
Salt, to taste
Black pepper, to taste
1/4 tsp nutmeg
1/4 cup all-purpose flour
Instructions
1. In a large pot, melt butter over medium heat.
2. Add the onions and garlic, sauté until onions are translucent.
3. Stir in the flour until well combined.
4. Gradually add the chicken broth, stirring constantly.
5. Add the broccoli florets and bring to a simmer.
6. Cook until broccoli is tender, about 15 minutes.
7. Use an immersion blender to puree to desired consistency.
8. Stir in heavy cream and cheese, mixing until cheese is melted.
9. Season with salt, pepper, and nutmeg.
10. Simmer for another 5 minutes and serve hot.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat on the stovetop over medium heat, stirring occasionally, until heated through.
