Mushroom and Spinach Quesadillas

Ingredients

1 tbsp olive oil
2 cloves garlic, minced
8 oz mushrooms, sliced
Salt to taste
Pepper to taste
2 cups fresh spinach
4 flour tortillas (8-inch)
1.5 cups shredded mozzarella cheese

Instructions

1. Heat olive oil in a large skillet over medium heat.
2. Add minced garlic and sliced mushrooms, sautéing until mushrooms are browned and tender, about 5 minutes.
3. Season with salt and pepper, then add spinach, cooking until just wilted.
4. Remove the mixture from the skillet and set aside.
5. Place a tortilla in the skillet, sprinkle with cheese, and spread the mushroom-spinach mixture over half.
6. Fold the tortilla over and cook until the cheese melts and the tortilla is golden brown, about 3 minutes per side.
7. Repeat with remaining tortillas and filling.
8. Slice and serve warm.

Storage

Store any leftover quesadillas in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a skillet over medium heat until warmed through and crispy, or in a preheated 350°F oven for 10 minutes.
