Mushroom & Smoky Beef Stroganoff

Ingredients
1.5 lb sirloin steak, sliced thin
8 oz cremini mushrooms, sliced
1 large onion, finely chopped
2 cloves garlic, minced
2 tbsp olive oil
2 tbsp smoked paprika
1 tbsp Dijon mustard
2 cups beef broth
1 cup sour cream
Salt to taste
Pepper to taste
12 oz egg noodles
2 tbsp parsley, chopped for garnish
Instructions
1. Heat olive oil in a large pan over medium-high heat.
2. Add the onions and garlic, sauté until translucent.
3. Stir in the mushrooms and cook until golden brown.
4. Season the beef with salt, pepper, and smoked paprika, then add to the pan.
5. Brown the beef on all sides, then stir in the Dijon mustard.
6. Pour in the beef broth and bring to a simmer.
7. Lower the heat and stir in the sour cream, cooking gently until thickened.
8. Meanwhile, cook egg noodles according to package instructions.
9. Serve the stroganoff over the noodles, garnished with parsley.
Storage
Store leftovers in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat gently on the stovetop over low heat until warmed through, adding a splash of broth if needed to loosen the sauce.
