Ingredients
1 cup couscous
1 1/2 cups chicken or vegetable broth
1/2 cup dried apricots, chopped
1/2 cup raisins
1/4 cup almonds, toasted and chopped
1/4 cup pistachios, toasted and chopped
1 tablespoon olive oil
1 teaspoon ground cumin
1 teaspoon ground coriander
1/2 teaspoon ground cinnamon
1/4 teaspoon turmeric
1/4 teaspoon cayenne pepper (optional)
Salt and pepper to taste
Fresh cilantro, chopped for garnish
Lemon wedges for serving
Instructions
1. In a medium-sized pot, bring the chicken or vegetable broth to a boil.
2. In a large bowl, combine the couscous with olive oil, cumin, coriander, cinnamon, turmeric, cayenne pepper, salt, and pepper.
3. Pour the boiling broth over the couscous and cover the bowl with a lid or plastic wrap. Let it sit for 5 minutes.
4. Fluff the couscous with a fork and stir in the dried apricots, raisins, toasted almonds, and pistachios.
5. Garnish with fresh cilantro and serve with lemon wedges on the side.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Reheat in the microwave on medium power for 2-3 minutes or until heated through. Alternatively, reheat in a skillet over medium heat, stirring occasionally.
