Ingredients

1 cup all-purpose flour

1 large egg
1/4 cup olive oil
1/2 cup tomato sauce
1 cup shredded mozzarella cheese
1/4 cup mini pepperoni
1/4 cup diced bell peppers
1 tsp dried oregano
1/2 tsp garlic powder

Instructions

1. Preheat oven to 375°F and grease a mini muffin tin.
2. In a large bowl, whisk together flour, baking powder, baking soda, and salt.
3. In another bowl, combine milk, egg, and olive oil. Gradually add to dry ingredients, stirring until just combined.
4. Spoon a tablespoon of batter into each muffin cup.
5. Top each with a teaspoon of tomato sauce, a sprinkle of mozzarella, mini pepperoni, and diced bell peppers.
6. Sprinkle oregano and garlic powder over the top.
7. Bake for 12-15 minutes or until muffins are golden and cheese is bubbly.
