Mini Meatball Subs

These delightful Mini Meatball Subs are perfect for any gathering, featuring juicy homemade meatballs drenched in tangy marinara sauce and topped with gooey melted cheese, all nestled in a mini sub roll. They are easy to handle and guaranteed to score big with your guests.

Ingredients

1 lb ground beef
1/2 cup breadcrumbs
1/4 cup grated Parmesan cheese
1/4 cup chopped parsley
1 egg
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1/2 tsp Italian seasoning
1 cup marinara sauce
6 mini sub rolls
1 cup shredded mozzarella cheese
2 tbsp olive oil

Instructions

1. Preheat your oven to 375°F.
2. In a large bowl, combine the ground beef, breadcrumbs, Parmesan cheese, parsley, egg, garlic, salt, black pepper, and Italian seasoning. Mix until well combined.
3. Shape the mixture into small meatballs, about 1 inch in diameter.
4. Heat olive oil in a large skillet over medium heat. Add meatballs and cook until browned on all sides, about 5-7 minutes.
5. Transfer the meatballs to a baking dish and pour marinara sauce over them.
6. Bake in the preheated oven for 15 minutes, until meatballs are cooked through.
7. Place the mini sub rolls on a baking sheet. Add cooked meatballs to each roll and top with mozzarella cheese.
8. Return to the oven and bake for an additional 5 minutes, until the cheese is melted and bubbly.
9. Serve warm and enjoy!

Storage

Store leftover subs in an airtight container in the refrigerator for up to 3 days.

Reheating

Preheat oven to 350°F and reheat the subs for about 10 minutes, or until heated through.
