Millet and Lentil Veggie Burgers

Delicious and protein-rich, these Millet and Lentil Veggie Burgers are perfect for a healthy meal. Millet and lentils provide the base for these satisfying and flavorful burgers that are great for grilling.

Ingredients

1 cup cooked millet
1 cup cooked lentils
1/2 cup breadcrumbs
1/2 cup grated carrots
1/4 cup finely chopped red onion
2 cloves garlic, minced
1 tbsp soy sauce
1 tbsp olive oil
1 tsp cumin
1/2 tsp smoked paprika
Salt and pepper to taste
2 tbsp chopped fresh parsley
1/4 cup all-purpose flour
2 tbsp olive oil for cooking

Instructions

1. In a large bowl, combine cooked millet, cooked lentils, breadcrumbs, grated carrots, red onion, minced garlic, soy sauce, olive oil, cumin, smoked paprika, salt, and pepper.
2. Mix well until all ingredients are evenly distributed.
3. Stir in chopped parsley and mix again.
4. Use your hands to form the mixture into 6 equal-sized patties.
5. Lightly dust each patty with flour on both sides.
6. Heat olive oil in a large skillet over medium heat.
7. Cook the patties for about 4-5 minutes on each side, or until golden brown and firm.
8. Serve immediately, or allow to cool before storing.

Storage

Store cooked burgers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, warm in a skillet over medium heat for 3-4 minutes on each side or until heated through.
