Ingredients
1 lb orzo pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup red onion, thinly sliced
1/2 cup feta cheese, crumbled
1/4 cup fresh parsley, chopped
1/4 cup fresh mint, chopped
1/4 cup extra-virgin olive oil
2 tbsp lemon juice
1 tsp dried oregano
Salt and pepper to taste
Instructions
1. Cook orzo pasta according to package instructions; drain and rinse under cold water.
2. In a large bowl, combine cooked orzo, cherry tomatoes, cucumber, olives, red onion, and feta cheese.
3. In a small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper.
4. Pour the dressing over the pasta mixture and toss to combine.
5. Add parsley and mint, then gently toss again.
6. Chill in the refrigerator for at least 30 minutes before serving.
Storage
Store in an airtight container in the refrigerator for up to 3 days.
Reheating
Best served cold, no reheating required.
