Mediterranean Dream Pasta Salad

Ingredients

8 oz rotini pasta
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/2 cup kalamata olives, pitted and halved
1/3 cup feta cheese, crumbled
1/4 cup fresh basil, chopped
1/4 cup extra-virgin olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper to taste

Instructions

1. Cook the rotini pasta according to package instructions until al dente. Drain and set aside.
2. In a large bowl, combine cherry tomatoes, cucumber, red onion, and kalamata olives.
3. In a small bowl, whisk together olive oil, red wine vinegar, oregano, salt, and pepper to create the dressing.
4. Add the cooked pasta to the large bowl with the vegetables. Pour the dressing over the top and toss to combine.
5. Gently fold in the crumbled feta cheese and fresh basil.
6. Serve immediately or refrigerate for 1-2 hours to allow flavors to meld.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Enjoy cold or at room temperature. Do not reheat.
