Ingredients
2 cans of tuna in olive oil (5 oz each)
1/2 cup diced cucumber
1/2 cup halved cherry tomatoes
1/4 cup sliced red onions
1/4 cup pitted and sliced Kalamata olives
1/4 cup crumbled feta cheese
2 tablespoons chopped fresh parsley
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
1 teaspoon dried oregano
Salt and pepper to taste
Instructions
1. Drain the tuna and place it in a mixing bowl.
2. Add diced cucumber, halved cherry tomatoes, sliced red onions, and Kalamata olives to the bowl.
3. Sprinkle crumbled feta cheese and chopped fresh parsley over the mixture.
4. In a small bowl, whisk together lemon juice, olive oil, dried oregano, salt, and pepper.
5. Pour the dressing over the salad and gently toss to combine.
6. Serve immediately or refrigerate for 30 minutes to allow flavors to meld.
