Ingredients

8 oz rotini pasta
1 cup cherry tomatoes, halved
1/2 cup cucumber, diced
1/4 cup red onion, thinly sliced
1/4 cup black olives, sliced
1/2 cup feta cheese, crumbled
1 tbsp fresh dill, chopped
1/4 cup olive oil
2 tbsp red wine vinegar
1 tbsp lemon juice
1 tsp Dijon mustard
1 clove garlic, minced
Salt and pepper to taste

Instructions

1. Cook the rotini pasta according to package instructions until al dente, then drain and let cool.
2. In a large bowl, combine cherry tomatoes, cucumber, red onion, and black olives.
3. In a small bowl, whisk together olive oil, red wine vinegar, lemon juice, Dijon mustard, minced garlic, salt, and pepper to create the dressing.
4. Add the cooled pasta to the vegetable mixture and pour the dressing over the top.
5. Toss everything together until well combined.
6. Sprinkle the feta cheese and fresh dill over the salad and gently mix.
7. Chill in the refrigerator for at least 30 minutes before serving to allow the flavors to meld.

Storage

Store in an airtight container in the refrigerator for up to 3 days.

Reheating

Enjoy cold or let sit at room temperature for 10 minutes before eating. Avoid microwaving to keep flavors fresh.
