Ingredients
1 large ripe avocado
1 cup cherry tomatoes, halved
1/4 cup crumbled feta cheese
2 tbsp olive oil
1 tbsp balsamic glaze
1 tbsp fresh lemon juice
1/4 cup fresh basil leaves, chopped
1/4 tsp sea salt
1/4 tsp black pepper
1 baguette, sliced
1 garlic clove, halved
Instructions
1. Preheat your oven to 400°F (200°C) and place baguette slices on a baking sheet.
2. Bake the baguette slices for 8-10 minutes until golden brown, then set aside to cool.
3. In a mixing bowl, combine diced avocado, cherry tomatoes, feta cheese, olive oil, lemon juice, salt, and pepper.
4. Stir in the chopped basil leaves gently to avoid mashing the avocados.
5. Rub each toasted baguette slice with the cut side of a garlic clove for flavor.
6. Spoon the avocado mixture generously onto each slice of baguette.
