Ingredients
6 medium beets, peeled and cut into wedges
2 tbsp olive oil
1/4 cup pure maple syrup
Juice and zest of 1 orange
1/2 tsp salt
1/4 tsp black pepper
2 tbsp fresh thyme leaves
Instructions
1. Preheat your oven to 400°F (200°C).
2. Arrange the beet wedges in a single layer on a baking sheet lined with parchment paper.
3. In a small bowl, whisk together the olive oil, maple syrup, orange juice, orange zest, salt, and black pepper.
4. Drizzle the mixture over the beets and toss well to ensure each piece is coated.
5. Roast in the preheated oven for 35-40 minutes, turning halfway, until the beets are tender and caramelized.
6. Sprinkle fresh thyme leaves over the roasted beets before serving.
Storage
