Maple Nutmeg Rice Pudding

Ingredients

1 cup long-grain white rice
2 cups water
4 cups whole milk
1/2 cup maple syrup
1/4 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
1/2 teaspoon ground nutmeg
1/2 teaspoon ground cinnamon
1/2 cup raisins
2 tablespoons unsalted butter
Chopped pecans for garnish

Instructions

1. In a medium saucepan, bring water to a boil and add rice. Cook for 10 minutes, then drain.
2. Return the saucepan to the stove, add milk, maple syrup, sugar, and salt, and bring to a gentle simmer over medium heat, stirring occasionally.
3. Lower the heat and continue to simmer, stirring frequently, until the rice is tender and the mixture thickens, about 30 minutes.
4. Stir in the vanilla extract, ground nutmeg, ground cinnamon, and raisins. Cook for another 5 minutes.
5. Remove from heat and stir in the butter until melted.
6. Serve warm or chilled, garnished with chopped pecans.

Storage

Store in an airtight container in the refrigerator for up to 5 days.

Reheating

Reheat gently in a saucepan over low heat or microwave until warm. Add a splash of milk if needed to reach desired consistency.
