Maple Mustard Roast Pork Loin

Ingredients
3 lbs pork loin
1/4 cup pure maple syrup
2 tbsp Dijon mustard
1 tbsp whole grain mustard
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 tbsp apple cider vinegar
Instructions
1. Preheat the oven to 375°F.
2. In a small bowl, mix the maple syrup, Dijon mustard, whole grain mustard, minced garlic, salt, black pepper, and olive oil to form a marinade.
3. Place the pork loin in a roasting pan and pour the marinade over it, ensuring it is well coated.
4. Roast the pork in the preheated oven for 45-55 minutes, or until the internal temperature reaches 145°F.
5. Baste the pork with the pan juices halfway through cooking for extra flavor.
6. Once cooked, remove from the oven and let it rest for 10 minutes before slicing.
7. Serve with the pan juices drizzled over the top.
