Maple Mustard Oven Roast

Ingredients

3 lbs beef roast
1/4 cup maple syrup
2 tbsp Dijon mustard
2 cloves garlic, minced
1 tsp salt
1/2 tsp black pepper
1 tbsp olive oil
1 tbsp fresh rosemary, chopped

Instructions

1. Preheat your oven to 350°F (175°C).
2. In a small bowl, combine the maple syrup, Dijon mustard, minced garlic, salt, and black pepper.
3. Rub the olive oil all over the beef roast, then coat it evenly with the maple mustard mixture.
4. Place the roast in a roasting pan and sprinkle the chopped rosemary on top.
5. Roast in the oven for about 2 hours, or until the internal temperature reaches 145°F (63°C) for medium-rare.
6. Remove the roast from the oven and let it rest for 10 minutes before slicing.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

To reheat, slice the roast and warm in a 325°F (160°C) oven until heated through, or use a microwave on a low setting.
