Maple Mustard Glazed Carrots

Ingredients

1 lb baby carrots
2 tbsp butter
2 tbsp maple syrup
1 tbsp Dijon mustard
1 tsp apple cider vinegar
1/2 tsp salt
1/4 tsp black pepper
1 tbsp chopped fresh parsley

Instructions

1. In a large skillet, melt the butter over medium heat.
2. Add the baby carrots to the skillet and sauté for 5 minutes, stirring occasionally.
3. In a small bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, salt, and black pepper.
4. Pour the maple mustard mixture over the carrots and stir to coat evenly.
5. Reduce the heat to low, cover the skillet, and let the carrots simmer for 10-12 minutes or until tender.
6. Remove the lid and increase the heat to medium to let the glaze thicken, stirring occasionally, for about 2-3 minutes.
7. Transfer the glazed carrots to a serving dish and garnish with chopped fresh parsley before serving.

Storage

Store any leftovers in an airtight container in the refrigerator for up to 3 days.
