Ingredients
4 lbs boneless pork shoulder
1/2 cup pure maple syrup
2 tbsp olive oil
1 tbsp fresh rosemary, chopped
1 tbsp fresh thyme leaves
1 tbsp fresh sage, chopped
1 tbsp Dijon mustard
1 tsp salt
1/2 tsp black pepper
3 cloves garlic, minced
Instructions
1. Preheat your oven to 325°F (165°C).
2. In a small bowl, mix maple syrup, olive oil, rosemary, thyme, sage, Dijon mustard, salt, pepper, and minced garlic.
3. Place the pork shoulder in a roasting pan and pour the maple herb mixture over it, ensuring even coverage.
4. Cover the pan with aluminum foil and roast in the preheated oven for 2 hours.
5. Remove the foil and increase the oven temperature to 375°F (190°C). Roast for an additional 1 hour, basting occasionally, until the pork is tender and has a caramelized crust.
6. Let the roast rest for 15 minutes before slicing and serving.
Storage
Store leftover pork roast in an airtight container and refrigerate for up to 3 days.
Reheating
To reheat, preheat oven to 325°F (165°C), place slices in a baking dish with a splash of broth or water, cover with foil, and warm for 20 minutes or until heated through.
