Ingredients
2 lbs pork tenderloin
1/3 cup pure maple syrup
1/4 cup Dijon mustard
2 tbsp olive oil
1 tbsp fresh thyme leaves
2 tsp ground cinnamon
2 large apples, cored and sliced
1/2 tsp salt
1/2 tsp black pepper
1 tbsp apple cider vinegar
2 cloves garlic, minced
Instructions
1. Preheat your oven to 375°F (190°C).
2. In a small bowl, whisk together maple syrup, Dijon mustard, olive oil, thyme, cinnamon, salt, and black pepper.
3. Place the pork tenderloin in a roasting pan and brush generously with the maple-mustard mixture.
