Maple Glazed Delicata Squash

Ingredients

2 Delicata squashes
2 tbsp olive oil
1/4 cup pure maple syrup
1 tsp sea salt
1/2 tsp black pepper
1/2 tsp ground cinnamon
1/4 cup chopped fresh parsley

Instructions

1. Preheat the oven to 425°F (220°C).
2. Slice the delicata squashes in half lengthwise, remove seeds, and cut into 1/2-inch thick slices.
3. In a large bowl, toss the squash slices with olive oil, salt, pepper, and cinnamon until well coated.
4. Arrange the slices on a baking sheet in a single layer and roast for 15 minutes.
5. Remove from the oven and drizzle with maple syrup.
6. Return to the oven and bake for an additional 10-15 minutes, until tender and caramelized.
7. Sprinkle with fresh parsley before serving.

Storage

Store cooled squash in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in a preheated oven at 350°F (175°C) for 10 minutes or until heated through.
