Maple-Glazed Corned Beef and Cabbage

Ingredients

3 lbs corned beef brisket
3 tbsp maple syrup
2 tbsp Dijon mustard
1/2 cup brown sugar
1 head cabbage, cut into wedges
1 lb carrots, peeled and cut into sticks
8 small red potatoes, halved
1 large onion, quartered
4 cups water
1 tsp black peppercorns
2 bay leaves

Instructions

1. Preheat the oven to 300°F.
2. Place the corned beef in a large roasting pan. Add water, peppercorns, and bay leaves.
3. Cover with foil and braise in the oven for 2 hours.
4. In a bowl, mix maple syrup, Dijon mustard, and brown sugar to form a glaze.
5. Remove the corned beef from the oven and spread half of the glaze over the top.
6. Place cabbage, carrots, potatoes, and onion around the beef. Cover and return to the oven for 1 hour.
7. Uncover, spread the remaining glaze over the beef, and bake for an additional 30 minutes until the glaze caramelizes.
8. Let the corned beef rest for 10 minutes before slicing. Serve with vegetables.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 300°F until warmed through, or use the microwave for quicker reheating.
