Maple Cinnamon Baked Sweet Potato

Ingredients

4 medium sweet potatoes
2 tbsp unsalted butter
2 tbsp maple syrup
1 tsp ground cinnamon
1/2 tsp salt
1/4 tsp black pepper
1/4 cup chopped pecans

Instructions

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
2. Wash and scrub the sweet potatoes, then pat them dry.
3. Place the sweet potatoes on the prepared baking sheet and pierce each potato several times with a fork.
4. Bake in the preheated oven for 45-60 minutes until tender and easily pierced with a fork.
5. In a small saucepan, melt the butter over medium heat. Stir in the maple syrup, cinnamon, salt, and pepper until well combined.
6. Once the sweet potatoes are done, remove them from the oven and carefully slice them open lengthwise.
7. Drizzle the maple cinnamon glaze over the sweet potatoes and sprinkle with chopped pecans.
8. Return the sweet potatoes to the oven for an additional 10 minutes to allow the flavors to meld.

Storage

Store leftovers in an airtight container in the refrigerator for up to 3 days.

Reheating

Reheat in the oven at 350°F (175°C) for 10-15 minutes until heated through or microwave on high for 2-3 minutes.
